A TAPESTRY OF FLAVORS: RICE & KRUMIRI (CANTIERE IN CANTINA)
Casale Monferrato
Description
An evocative journey through the finest local agricultural produce and traditional specialties - much more than simple pleasures for the palate. These products are the purest expression of biodiversity, artisan dedication and local rural knowledge. This is not a story to be told, but an experience to enjoy with all your senses. Walking through nature and visiting local producers, discovering age-old traditions and uncovering the secrets of skills handed down through generations, means connecting deeply with the identity of the land. It is an invitation to rediscover the value of slow living, craftsmanship and a close connection with the land, where outstanding local produce becomes landscape, culture and unforgettable memories.
Casale Monferrato, the ancient capital of the marquisate, is a city steeped in art and history, where a rich and vibrant food and wine tradition has developed over time. This journey brings together two of the area’s culinary treasures. Venture into the flooded expanses of the characteristic "checkered sea" where high-quality rice is grown according to a long-established tradition deeply rooted in and respectful of the land. Then, return to the city’s historic workshops to discover an undisputed icon of Italian pastry-making: the Krumiro.
Arrive at Azienda Agricola Ardizzina close to Casale. Founded in the early 1900s, the farm covers around 16 hectares of land irrigated by its own wells. Paolo and his family produce high-quality rice with minimal external input and a strong commitment to sustainability through the production chain. The farm is GMO-free certified and does not use industrial sludge. During a guided tour of the farm, you will discover every stage of rice production, from cultivation in the fields to processing and packaging. Learn about the different varieties and classification of Carnaroli rice and how sustainable farming can contribute to quality, nutrition and well-being. The visit concludes with a risotto tasting, offering the perfect opportunity to savor the quality and distinctive character of the rice produced here.
Our journey continues through the flavors of Monferrato, where we meet Augusto of Antica Krumireria Corino. Step inside this traditional shop in the heart of the city, where original period furnishings preserve the atmosphere and charm of times gone by. What makes Augusto's krumiro so unique? The secret lies in the traditional production methods, with every biscuit carefully handmade using high-quality ingredients chosen to remain as faithful as possible to those used in the original early 19th century recipe. The result is a true taste of history, preserving the character and authenticity of this traditional specialty. The biscuit is available in a wide range of varieties: from classic sweet versions to savory options, as well as vegan, gluten-free and sugar-free recipes, to satisfy different tastes and dietary requirements.
And then… it’s time to taste it! Enjoy the biscuit with zabaione or coffee, discover Ractagino, the biscuit maker’s specialty made with Piedmont PGI hazelnuts. For an even more indulgent experience, pair it with the Krumiro liqueur or a glass of passito wine.
Before leaving Casale, enjoy a tour of the historic center, with its characteristic arcades, or a charming walk at sunset along the trail that follows the River Po.
