Monferrato is not only a land of great wines and rolling hills shaped by vineyards; it is also the guardian of a thousand-year-old rural culinary tradition, deeply rooted in the rhythms of the land and changing seasons. One of the most fascinating and demanding traditions is the art of preserving the fruits of the land in glass jars, traditionally known as burnie.

Born out of necessity and the desire not to waste the abundance of summer and autumn harvests, this tradition is built on two fundamental principles.
Seasonality as a guiding principle: each jar captures the authentic flavor of produce at the perfect moment of ripening, preserving the warmth and abundance of summer to be enjoyed at the winter table.
From Garden to Pantry: peeled tomatoes, fleshy peppers and crisp beans, but above all the traditional sauces that bring local dishes to life such as bagnet verd and bagnet ross, together with fruit preserved in syrup or spirits.

Behind "Monferrato in barattolo" are Laura and Alessandro from Azienda Agripassione, who lovingly transform traditional recipes into authentic Monferrato specialties. With no preservative or additive, a truly short supply chain and careful artisan production, they capture and preserve the authentic flavors of the land in every precious jar.
